Kwong Chow Congee Noodle House

All 3 dishes we ordered at Kwong Chow Congee Noodle House were nearly flawless. Besides the familiar flavours of garlic, ginger and green onion from howtown, they totally nailed the texture and temperature as well. With my eyes closed I could visualize those dishes being prepared in a sizzling hot wok handled by such powerful chef hands, and with such impeccable timing – a few seconds too early or too late would have completely ruined the perfection. This is how it gets interesting: none of the main ingredients were from ‘Kwong Chow’ by any means – celery, ostrich, black cod, and huge pacific oysters. This is why I think the best quality Cantonese eats are not in China, but here in Vancouver!

Ostrich Stir Fry with XO sauce was seemingly inspired by a Cantonese classic, Beef Stir Fry. To be honest, I probably would have believed this is beef that they are serving. There is also celery in the dish, adding some crunch, contrasting the texture of thinly sliced of ostrich that are so delicate and tender. As ostrich has really lean meat, they have used starch (from water chestnut or tapioca) in the marinade mix to tenderize the meat a little bit. But most importantly, it requires the mad wok skills buy valium 5mg online with precising timing to produce such perfect texture on the meat.

For $10.80, Black Cod in Sizzling Pot is a steal! Chunks of black cod belly, slightly breaded and deep fried, stir fried in hot wok, and finally finished with oyster sauce and green onions – is sizzling hot and smelled amazing. When I bit on a piece of fish through slightly crispy exterior, it tasted warm and moist inside. And with all the rich and fatty omega 3 goodness, this dish totally showcases how luscious black cod is

The Steamed Oysters were very delicate with only finely chopped garlic and a little bit oil. I could have ordered a different type of preparation with black bean sauce, but I prefer a bit lighter on the sauce so that I could taste how fresh the oyster is.
