The Chef\/Owner Kim Hyun Woo, a South Korea-born and classically trained, has an impressive resume that includes working at the michelin-starred juggernaut, Thomas Keller&#8217;s <em><strong>The French Laundry<\/strong><\/em>, as well as <em><strong>Miku<\/strong><\/em>, the \u00a0local high-profile eatery of modern Japanese cuisine. When Sophia from <a href=\"http:\/\/www.sophiaeats.com\/\" target=\"_blank\">Sophiaeats.com<\/a> invited me to Kuma&#8217;s media tasting event, I was eager to find out how the chef would incorporate all Korean, Japanese and French cooking\u00a0to his menu.<\/p>\n<p>We started with <strong>Kuma Signature Salad<\/strong> ($10.75), \u00a0a \u00a0plate full of vibrant fresh ingredients, with yam chips in different colours (purple, white &amp; yellow) and iceberg lettuce for the crunch , \u00a0topped with some house-made ricotta and sliced avocado for the creaminess, drizzled with a house citrusy dressing, and finally finished with\u00a0a ring of balsamic reduction. Besides being visually pleasing, the salad boasts some great texture contrast and the refreshing flavours, which makes it fun to eat. But personally I&#8217;m not\u00a0a big fan of iceberg lettuce as\u00a0it provides so little taste while get\u00a0bruised so easily and messy.<\/p>\n<figure id=\"attachment_8656\" aria-describedby=\"caption-attachment-8656\" style=\"width: 900px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2016\/08\/image-60.jpeg\"><img loading=\"lazy\" class=\"wp-image-8656 size-full\" src=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2016\/08\/image-60.jpeg\" alt=\"Kuma Signature Salad\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2016\/08\/image-60.jpeg 900w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2016\/08\/image-60-300x200.jpeg 300w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2016\/08\/image-60-768x512.jpeg 768w\" sizes=\"(max-width: 900px) 100vw, 900px\" \/><\/a><figcaption id=\"caption-attachment-8656\" class=\"wp-caption-text\">Kuma Signature Salad<\/figcaption><\/figure>\n<p>Booze is definitely\u00a0one of the most important integral part of the izakaya experience. Kuma recommends soju as\u00a0the choice of alcohol to go with\u00a0the tapas dishes. Chef Kim was showing us all five flavours of the <strong>Chum Churm<\/strong>\u00a0and<strong>\u00a0Jinro\u00a0<\/strong>soju: Original, Citron, Apple, Peach and Grapefruit. Being always a fan of the Chum Churum Original, I actually never tasted their flavoured soju. I always prefer using plain\u00a0soju in creating cocktails or\u00a0shots. But if you want to drink like a real Korean, sipping soju straight is certainly\u00a0how they do it.<\/p>\n<figure id=\"attachment_8653\" aria-describedby=\"caption-attachment-8653\" style=\"width: 900px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2016\/08\/image-57.jpeg\"><img loading=\"lazy\" class=\"wp-image-8653 size-full\" src=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2016\/08\/image-57.jpeg\" alt=\"soju\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2016\/08\/image-57.jpeg 900w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2016\/08\/image-57-300x200.jpeg 300w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2016\/08\/image-57-768x512.jpeg 768w\" sizes=\"(max-width: 900px) 100vw, 900px\" \/><\/a><figcaption id=\"caption-attachment-8653\" class=\"wp-caption-text\">soju<\/figcaption><\/figure>\n<p>For hot tapas, we were served with\u00a0the izakaya classics, the Ebimayo\u00a0and Chicken Karaage, although the\u00a0versions here were the <strong>Mango Ebimayo<\/strong> ($12.50) and the <strong>Crispy Chicken<\/strong> ($15.50). While The mango mayo was delicious, it was great\u00a0to see the little touches like some sprinkled herbs, cherry tomatoes, and garlic chips that elevated the whole dish. The fried chicken dish was more of the Korean style. We were able to try the <strong>Kuma Assorted Sashimi<\/strong> ($29.99) with Sockeye salmon, Albacore tuna, Hamachi, Amaeb and Masago Tai. \u00a0For 30 bucks, the sashimi is super fresh and\u00a0tasty. But what&#8217;s more impressive about this dish is the serving bowl made from a piece of ice, quite whimsical in presentation. \u00a0The <strong>Aburi Nigiri<\/strong>\u00a0included Hamachi and Amaebi ($3.75\/piece). \u00a0I just loved the size of the cut of Hamachi on those little rice pillows, which provided such a satisfying sensation in my mouth. The prawn\u00a0heads from Amaebi were also served deep fried tempura style. Although Sophia mentioned that the rib should have been more tender, this is already a perfection for me as I&#8217;m such a texture guy. And I was happy to find a whole meaty squid on top of the noodles. Aren&#8217;t we lucky to have the first taste. The serving vessels was definitely making the dessert more appealing. The chic lounge ambiance reminds me some of the places I have visited in Seoul. However, their classic Japanese\/Korean dishes as well as some typical izakaya fare \u00a0are impressive with quality ingredients, refined details or little twists, which showed us a glimpse of the chef&#8217;s classically trained background. According to my friend Food Wench, the chef is planning to train his line of chefs to adapt more modern ways of cooking. This is definitely exciting if it\u2019s true and I am looking forward to the updates.<\/p>\n<p>* All food and beverages in this review were complimentary.
