Nothing beats having a good time over delicious food and wine with close friends, the ones who do not have family dinner plans during the holidays. This year I invited 5 friends over for dinner on Christmas Eve.<\/p>\n<p>My dear friend <a title=\"Melissa is one of the the best hair stylists in downtown Vancouver! Click here to see her info...\" href=\"http:\/\/luscioussalon.com\/stylists\/salon-stylist-pics-004\/\" target=\"_blank\">Melissa<\/a> invited me to her Christmas Day \u00a0turkey dinner. I was simply overjoyed because I was in a treat for a traditional meal without tackling the cooking of the big bird myself!<\/p>\n<p>Don&#8217;t get me wrong. Fruit salad in the cocktail: guava, mango, lotus root, and cucumber, with Champagne\u00a0dill sauce.\u00a0No trick in searing the scallop, just butter, salt, pepper and lemon juice<\/p>\n<p>Champagne\u00a0foam whipped with dijon mustard, \u00a0maple syrup, and the key ingredient: egg white!<\/p>\n<p><!--more--><\/p>\n<figure id=\"attachment_42\" aria-describedby=\"caption-attachment-42\" style=\"width: 537px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/pickydiners.com\/www\/wp-content\/uploads\/2011\/01\/2010xmas-roastduck.jpg\"><img loading=\"lazy\" class=\"size-full wp-image-42 \" title=\"Roast whole duck with rice stuffing, Steak and Swiss cheese sandwiches\" src=\"http:\/\/pickydiners.com\/www\/wp-content\/uploads\/2011\/01\/2010xmas-roastduck.jpg\" alt=\"\" width=\"537\" height=\"720\" srcset=\"https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2011\/01\/2010xmas-roastduck.jpg 537w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2011\/01\/2010xmas-roastduck-223x300.jpg 223w\" sizes=\"(max-width: 537px) 100vw, 537px\" \/><\/a><figcaption id=\"caption-attachment-42\" class=\"wp-caption-text\">Roast duck, Multi-Grain Rice and Shiitake Stuffing, Warm Asparagus Salad<\/figcaption><\/figure>\n<p><strong>Main Course<\/strong>:<\/p>\n<p>Roast duck with Multi-Grain Rice and Shiitake Stuffing, with Warm Asparagus Salad.<\/p>\n<p>Swiss Cheese and Steak Sandwiches.<\/p>\n<p>Here are some details in the making those dishes:<\/p>\n<p>Dry rub for the duck:  fresh chopped tarragon, orange juice, lemon zests and orange zests, generous amount of garlic salt and black pepper, maple syrup. High heat for browning the duck for 20 mins, low heat \u00a0for slow roasting for 2.5 &#8211; 3 hours on top of a bed of slices of oranges and onions.<\/p>\n<p>18-grain rice (produced in Korea apparently), pre-cooked with chopped shiitake mushroom, sauteed duck liver, and a few thinly sliced dried orange peel (which need to be soaked in warm water for 8 hours before used).<\/p>\n<p>Asparagus poached in water til dark green, sauteed in a large pan with grape seed oil, white wine, lemon juice and lemon zest. Salt and pepper to taste.<\/p>\n<p>Top sirloin steak grilled to medium rare. Sautee onion with garlic til caramelized. \u00a0Make a <a title=\"How to make a roux\" href=\"http:\/\/en.wikipedia.org\/wiki\/Roux\" target=\"_blank\">roux<\/a> and add in grated fine Swiss cheese and stir to smooth consistency. Salt and pepper to taste. \u00a0Lay onion and \u00a0pour cheese sauce on the sandwiches.<\/p>\n<p>I have to thank Louis and Jane, who help me with some prep work. And Sean! Thank you for the beautiful and ultra delicious pink Moet and helping me making the cheese sauce. After all, Swiss people know their cheeses. LOL.
