But a few lucky ones, including my buddies, <a href=\"http:\/\/www.eatingwithkirby.com\/2017\/11\/kitchen-by-yugo-harmony-of-japanese-and-french-cuisine.html\">Eating with Kirby<\/a> and <a href=\"http:\/\/foodology.ca\/lunch-kitchen-by-yugo\/\">Foodology<\/a>, had a taste of Alex&#8217;s take on French-Japanese fusion cooking, a seemingly tough task to harmonize the West and the East. And they loved it.\u00a0 The fact is, Alex was secretly planning to open a full-fledged restaurant of his dream. He found a spot on a busy block of restaurants on Main near King Edward, and <a href=\"http:\/\/restaurantyugo.com\/#yugo-restaurant\">Restaurant Yugo<\/a>\u00a0was opened just recently right after Easter. And thanks to my new fellow foodie Rita, a friend of chef Alex, I had a chance to come down there for a lovely lunch.<\/p>\n<p><a href=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/IMG_1773.jpg\"><img loading=\"lazy\" class=\"wp-image-14146 size-full\" src=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/IMG_1773.jpg\" alt=\"Restaurant Yugo\" width=\"2304\" height=\"1536\" srcset=\"https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/IMG_1773.jpg 2304w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/IMG_1773-300x200.jpg 300w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/IMG_1773-768x512.jpg 768w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/IMG_1773-1024x683.jpg 1024w\" sizes=\"(max-width: 2304px) 100vw, 2304px\" \/><\/a><\/p>\n<p>The tastefully designed dining room has a mix-of-classic-and-contemporary feel with an open sushi kitchen, probably one of the biggest raw bars I have seen in the city, featuring a hanging shelf for displaying a collection of large\u00a0bottles of imported sake, something\u00a0I truly miss from traveling in Japan. The wood and\u00a0brick structure is the hipster\u00a0touch,\u00a0 with some modern semi-open layout also incorporated &#8211; a compromise between the\u00a0hipster casual and fine dining, definitely feeling the\u00a0Main Street vibe.<\/p>\n<p><a href=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/6F6D9F29-D694-4539-A259-77CAB0B07DE9.jpeg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-14141\" src=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/6F6D9F29-D694-4539-A259-77CAB0B07DE9.jpeg\" alt=\"\" width=\"2044\" height=\"1359\" srcset=\"https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/6F6D9F29-D694-4539-A259-77CAB0B07DE9.jpeg 2044w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/6F6D9F29-D694-4539-A259-77CAB0B07DE9-300x199.jpeg 300w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/6F6D9F29-D694-4539-A259-77CAB0B07DE9-768x511.jpeg 768w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2018\/04\/6F6D9F29-D694-4539-A259-77CAB0B07DE9-1024x681.jpeg 1024w\" sizes=\"(max-width: 2044px) 100vw, 2044px\" \/><\/a><\/p>\n<p>The lunch menu seems straightforward, highlighting a spectrum of staple Japanese dishes such as &#8220;Tempura Soba&#8221;, &#8220;Chirashi&#8221;, &#8220;Pressed Aburi &amp; Maki&#8221;, and &#8220;Nigiri &amp; Maki&#8221;, and some western or fusion sounding items like &#8220;Risotto&#8221;, &#8220;Pasta&#8221;, and &#8220;Carbonara Udon&#8221;.<\/p>\n<p>I had my\u00a0eyes on the\u00a0<strong>House Bento Limited<\/strong>\u00a0($18) which sounds like the perfect taster to sample as it features the chef&#8217;s choice of 6 little dishes but eventually decided to take the <strong>Chirashi<\/strong> ($19) instead. The chef&#8217;s take on chirashi\u00a0is inspired by chirashizushi, for which the sashimi-grade fish and seafood are finely diced instead of served in whole pieces. The ingredients were incredibly\u00a0fresh and the arrangement was thoughtful, making sure that fish, tamago\u00a0(egg), and edamame are all included in every single bite. The braised pork <a style=\"text-decoration:none; font-weight:normal; color:#000;\" href=\"https:\/\/www.tramadolshoppingguide.com\/ \"> buy cheap tramadol <\/a> belly was super tender in the Bibimbap, and satisfyingly delicious along with the mustard caviar. Bok choy was charred for the smoky flavour.\u00a0 Large chunks of kimchi and lotus root tempura, as well as a soft-boiled\u00a0egg, could be also found in the sizzling hot stone bowl. As the server humbly called it the <strong>Daikon Salad Roll<\/strong>\u00a0 ($13), the chef chuckled and told us he didn&#8217;t really have a name for it yet.\u00a0 I think I would like to name it &#8220;The Essence of Daikon, Hamachi, and Beet&#8221;, as these 3 ingredients were front and center.\u00a0 The richness of hamachi, the highly sought-after fish for its fattiness, received a refreshing contrast from a thin crunch sheet of daikon, with also small leafy greens and avocado in the roll. The French technique kicked in with a beautiful beet puree &#8211;\u00a0a smart balance to all the fresh ingredients on the plate.\u00a0 Even the garnishing cilantro oil and pink peppercorns adding zesty touches to the dish. Just look at the names.\u00a0 &#8220;Spicy Fish Tartar&#8221; with crispy cheese sushi rice cake? &#8220;Ika\u00a0Karaage&#8221; with truffle mayo? &#8220;Confit Beef Tongue&#8221;? &#8220;Risotto&#8221; with Hokkaido scallops, black truffle, and Ikura honey ricotta?\u00a0 I&#8217;m incredibly intrigued.<\/p>\n<p>Chef Alex is passionate about working with\u00a0quality ingredients. It&#8217;s no surprise that\u00a0much of the fish, vegetables, rice, and sake options are imported directly from Japan.\u00a0 But he keeps the menu seasonal as he largely incorporates local ingredients into his creations as well. And that&#8217;s the trend we love to see, combining global flavours and local ingredients together, and bringing people together.
