If you are a Cantonese, you must include a chicken dish for dinner at any special occasion, especially for Chinese New Year.\u00a0 The restaurant is owned by <a href=\"http:\/\/www.wingtat.ca\/\">Wingtat Chicken Farm<\/a>, known for eir free-range Loong Kong chicken. This special type of chicken has to be raised with a specific method, and grown\u00a0to have tighter meat due to free running, but also enough amount of fat so that the meat is not too dry, which is great for all the Cantonese chicken dishes.\u00a0 The farm even exports the birds back to China and Hong Kong.<\/p>\n<p>My favourite chicken dishes here are the Soy Sauce Chicken and Qing Ping Chicken. But I think for the general public, Soy Sauce Chicken is much more acceptable for it&#8217;s slightly sweeter taste on the exterior.\u00a0 However, I wouldn&#8217;t recommend the Hainan Chicken here. I would rather go to Mui Garden in the neighbourhood for it.<\/p>\n<p>Here are the chicken dishes at the restaurant, and they are the most common chicken dishes on Cantonese dinner table.<\/p>\n<ul>\n<li><strong>Empress Chicken<\/strong> &#8211; Poached in a slow-simmering broth, and cooled down in a cold broth and cooking wine.<\/li>\n<li><strong>Ching Ping Chicken<\/strong> &#8211; Similar to Gui Fei, but fish sauce or seafood ingredient is added to the broth.<\/li>\n<li><strong>Hainan Chicken<\/strong> &#8211; poached in water that&#8217;s seasoned lightly, then cooled in ice water bath. It&#8217;s plainer.<\/li>\n<li><strong>Soy Sauce Chicken<\/strong> &#8211; poached in a special sauce made mainly with soy sauce and cooking wine and sugar, served warm<\/li>\n<li><strong>Ginger &amp; Green Onion Chicken<\/strong> &#8211; an Empress Chicken with a Ginger and Green Onion Sauce, served warm.<\/li>\n<li><strong>Salt Baked Chicken<\/strong> &#8211; Baked in Salt, served warm<\/li>\n<\/ul>\n<figure id=\"attachment_10963\" aria-describedby=\"caption-attachment-10963\" style=\"width: 1750px\" class=\"wp-caption alignnone\"><a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/FullSizeRender-9-6.jpg\"><img loading=\"lazy\" class=\"wp-image-10963 size-full\" src=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/FullSizeRender-9-6.jpg\" alt=\"Soy Sauce Chicken @ Specialty Chicken and Wonton House\" width=\"1750\" height=\"1168\" srcset=\"https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/FullSizeRender-9-6.jpg 1750w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/FullSizeRender-9-6-300x200.jpg 300w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/FullSizeRender-9-6-768x513.jpg 768w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/FullSizeRender-9-6-1024x683.jpg 1024w\" sizes=\"(max-width: 1750px) 100vw, 1750px\" \/><\/a><figcaption id=\"caption-attachment-10963\" class=\"wp-caption-text\">Soy Sauce Chicken @ Specialty Chicken and Wonton House<\/figcaption><\/figure>\n<p>Here they also have very good <strong>Deep Fried Squab<\/strong> or <strong>Soy Sauce Squab<\/strong> here, but they need to be ordered in advance. Preparing Pea Shoot is more labor-intensive than other vegetables. I really like the <strong>Whole Red Snapper<\/strong> dish which is basically 2 dishes, with fish fillet stir-fried with snow peas on top of the fish bones breaded and deep fried at the bottom. Never waste any part of a whole fish!<\/span><\/p>\n<p><a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/IMG_1199.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-10967\" src=\"http:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/IMG_1199.jpg\" alt=\"\" width=\"2304\" height=\"1536\" srcset=\"https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/IMG_1199.jpg 2304w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/IMG_1199-300x200.jpg 300w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/IMG_1199-768x512.jpg 768w, https:\/\/www.pickydiners.com\/www\/wp-content\/uploads\/2017\/05\/IMG_1199-1024x683.jpg 1024w\" sizes=\"(max-width: 2304px) 100vw, 2304px\" \/><\/a><\/p>\n<p>I recommend this place if you have a smaller party (2 \u2013 4 people). Despite the unexciting name of the restaurant, their specialty Soy Sauce Chicken is worth checking out and makes a great Chinese New Year dish. I like their other chicken dishes as well, although they may be more suitable if you have a keen palate for Cantonese food. The Deep Fried Squab makes a great alternative for chicken, although it is a little pricier. For greens, the Pea Shoot Stir Fry with Garlic is well executed. The price here\u00a0have gone up a lot the last year.
